Cucumber Salad

Kind of a cult classic for summer parties and gatherings, the dill makes the freshness pop. Preparing it a few hours early helps to marinate the flavors before serving.

INGREDIENTS

1 large cucumber, sliced

3 tbsp. apple cider vinegar

3 tbsp. olive oil

½ red onion, sliced thinly

1 tsp. fresh dill, chopped

½ tsp. sea salt

1 tsp. honey (optional)

PREPARATION 
  1. Whisk together olive oil, apple cider vinegar, salt, and honey in medium bowl.

  2. Slice cucumbers thinly by hand or with mandolin and add to bowl, mixing together.

  3. Slice onion and dill and add to cucumber mixture, blending well.

  4. Chill covered in the refrigerator for 1-2 hours and mix again before serving.

TIPS
  • Sweetener is optional: honey, sugar, agave or maple syrup. Vegan mayo can be added for a creamier consistency.
