Kale Salad

This is a very simple kale salad. Sometimes the length of time to make a salad discourages people from eating their greens. This one is so quick and easy but with all the flavors you need.


2 cups dino kale, chopped     into fine strips

½ avocado, sliced

¼ cup dried cranberries

¼ cup walnut halves

1-2 tbsp. olive oil

sea salt to taste

Ready in 10 minutes

  1. Wash and dry kale leaves.

  2. Remove the leaves from the stems and roll the leaves.

  3. Cut kale leaves into 1”- 2” long strips

  4. Put kale into bowl and pour on olive oil, starting with 1 tablespoon

  5. Add cranberries, walnuts, salt and toss.

  6. If all the leaves are coated with oil, no need for more, but check for preference.

  7. Top with avocado.

  • Any dressing will work, you’re not limited to just olive oil. Lemon is a nice addition, too. Any nuts can be substituted here and any other veggies can be added if you have the time and inclination.
