Raw Oatmeal Nut Cookies

When your sweet tooth is calling these frozen cookies hit the spot and their high-fat content keeps you from overeating!

INGREDIENTS

1 cup macadamia nuts

12 dates

1 ½ cup shredded coconut

½ cup gluten-free oats

⅓ cup cacao nibs

2 tbsp. almond butter

2 tbsp. maple syrup

1 tbsp. hemp seeds

1 tbsp. vanilla extract

1 tbsp. coconut butter,           softened

½ cup dried cranberries

PREPARATION 
  1. Place oats and macadamia nuts in Cuisinart and blend to break down to small pieces.  

  2. Add all the rest of the ingredients except cranberries and mix together.

  3. Stop to scrape sides as you go. It will moisten as ingredients blend.  

  4. Once well-blended transfer to large bowl and fold in cranberries.  

  5. Put parchment paper down in large glass rectangular storage.  

  6. Scoop a tablespoon size of cookie dough into your hands and roll into a ball and place on parchment

  7. Continue until all dough is made into cookies, putting parchment paper on top of cookies and layer more cookies.

  8. Store in freezer.

TIPS
  • Variations:  Add goji berries, walnuts, dried elderberries, or carob powder.
