Super Miso Soup
Miso is a paste made from fermented soybeans, barley or chickpeas that is rich in probiotics. It makes a great base for soup, dressings, or dips.
2 tbsp. yellow miso paste
2 cups warm water or tea
2 tbsp. hemp seeds
½ cup kale, chopped
1 tsp. coconut oil
1 tsp. sesame seeds
Optional Add-ins: tofu, black beans, seaweed, green onion, chard, coconut oil, and spinach.
Ready in 20 minutes
Warm two cups of water in medium saucepan until hot but not boiling.
Place warm water in a Vitamix blender, add miso, hemp seeds, coconut oil, and kale. Blend until smooth.
Transfer to bowl or cup, add sesame seeds and enjoy immediately.
Miso’s probiotics are delicate and are destroyed at high temperatures. It’s important not to boil the soup after the miso paste has been added.
